Yuzamashi is a useful tea aware used to adjust the water temperature when preparing Matcha or any other tea that requires a brewing temperature below the boiling point.
The required amount of boiling water is transferred into the Yuzamashi for a short period of time in order to cool down and reach the ideal brewing temperature of your tea.
Once the boiling water is poured into the Yuzamashi, within a time frame of 30-60 seconds, it reaches an average temperature of 80C degrees which is ideal for brewing Matcha and the majority of other teas such as loose leaf green tea and oolong.
For teas such as Gyokuro and White tea, which require brewing temperatures between 65-75 C degrees, please transfer the water into another vessel before brewing or simply let it cool down in your Yuzamashi for a longer period of time (2-3 minutes).
