Houjiki, also known as Hojiki, Houko or Houroku in Japanese, is a ceramic tool designed to roast fresh green tea into Hojicha at home (but also coffee beans or sesame seeds) directly from a flame or stovetop.
Simply heat up the pan, add fresh green tea, and roast for a desired amount of time (usually a few minutes) making sure to keep rotating the vessel allowing the tea to move around for an even roast.
When the tea reaches the right roast level it can be easily transferred into a teapot by tilting the Hoijiki up and letting the leaves run through the hollow handle (see picture 2).
